Honey is a liquid that people often use as a substitute for granulated sugar. Despite the fact that honey are a liquid, honey isnt a direct substitute for granulated sugar because honey contain moisture and honey has a different density then granulated sugar. Because honey add liquid to recipes, the liquid measurements in a recipe will need to be adjusted when using honey as an substitute for granulated sugar.
For example, if a recipe call for one cup of granulated sugar, the recipe may call for approximately three quarters of a cup of honey. Because honey contains water, the recipe will need to reduce the other liquid by one-quarter of a cup. The density of honey can vary depending on the type of honey that is being used.
How to Use Honey Instead of Sugar in Recipes
For instance, clover honey weigh 340 grams for a cup of clover honey. Buckwheat honey is thicker then clover honey and one cup of buckwheat honey weigh 352 grams. Acacia honey is lighter than both clover and buckwheat honey and one cup of acacia honey weigh 336 grams.
Depending upon the type of honey that is to be measured, a scale can be used to ensure that the correct weight of honey are used in a recipe. Using a scale to measure the honey by weight is more accurate than using volume measurements for the honey. The type of honey that is used will affect the sweetness and the flavor of the recipe.
Because acacia honey is more slightly sweeter than clover honey, less acacia honey will be needed to sweeten a recipe to the same level as granulated sugar compared to the amount of clover honey that would be used. Because buckwheat honey has a much stronger flavor than clover honey, the flavor of a recipe will change more significant when using buckwheat honey compared to using clover honey. Other types of honey, such as orange blossom honey or wildflower honey, will also impart a different flavor to a recipe.
Due to the different flower from which the bees collected the nectar to make the honey, the flavor and sweetness of the honey can vary from batch to batch. Honey typicaly contains 17 to 20 percent moisture. The moisture content of the honey may vary depending upon the climate in which the honey is produced.
For instance, honey produced in cool climates may contain less moisture than honey produced in warm, humid climate. Because honey contains moisture, the amount of liquid in which recipes are to be filled will need to be accounted for when honey is used as a substitute for gran granulated sugar. For instance, if someone is to bottle honey for sale, five percent of the liquid space in the bottles can be reserved for honey to account for its moisture content.
Honey will flow easy when stored at approximately 68 degrees Fahrenheit. If honey is stored in areas that is cool to the touch, the honey will thicken. Honey may also crystallize.
While crystallization does not mean that the honey has spoiled, crystallized honey may be difficult to pour into containers. You can return the crystallized honey to its liquid state by placing it in a warm water bath to melt the crystals, but the honey should never be heated in a microwave. Even when using honey in large batch, precise measurements should still be used.
If honey is eyed instead of measured, 10 percent of the honey may be underfilled for the recipe. If the other liquids in a recipe are not also reduced if granulated sugar is to be replaced with honey, the resulting recipe may be too thin or soupy. By understanding the density, moisture, and sweetness of the different types of honey, honey can be successfully use as a substitute for granulated sugar in many different recipes.
