How to Thicken Sauces with Cornstarch
Why does that last part matter? Because a broth-based sauce will loosen up more then a cream-based sauce. And if you leave the sauce sitting in a warm spot, like on a buffet table, it’s going to loosen up more than if you serve it hot off the stove.
