Planning a meal with rice requires you to understand how much rice each persons will eat and how much cooked rice each portion of dry rice will produce. A portion of rice alone can be alot for cooking, but a portion of rice alone may be a small amount when plated. You must consider the number of people that will be eating the meal, but you must also consider the other foods that will be on the plates alongside the rice.
