Mozzarella Cheese ranks among the most favorite cheeses globally. It offers gentle taste, creamy texture and very good melting ability. Originally from Italy, it became a key part of kitchens around the globe.
It works surprisingly well for pizzas, pastas, sandwiches and salads.
All About Mozzarella Cheese
In the base mozzarella is created from the early phases of cheese making, when casein particles and serum separate one from the other. Use rennet together with citric acid to reach proper clotting, that forms ideal separation of curds and serum for stretchy mozzarella. After draining, leave the curds to rest, so that they create smoothness and escape lumpy structure in the final cheese.
Genuinely traditional mozzarella is prepared from buffalo milk. Instead, if one uses cow milk, one calls the result “fior di latte“. Preparing mozzarella without bacteria starter and with citric acid instead is seen as an unconventional mode.
It belongs to the most diffucilt cheeses to produce, because of its high technique.
Various kinds of mozzarella exist. The drier variant is denser and sharper, which makes it good for melting in pots, lasagnas and on pizzas. That has stretchy, but quite stable consistency.
Fresh mozzarella gives always fresh taste with creamy texture and tender milky nuance. There is also burrata, that is made up of mozzarella filled with fresh cream. Cutting it, the internal part becomes very soft.
It works well on pizza or inn salads.
Full milk mozzarella offers rich taste, soft and creamy structure and wonderful melting traits. The drier part-skim variant has slightly less water than the real kind. Pre-shredded cheeses are best avoided.
Grating cheese at home delivers better results.
One can store fresh mozzarella for up to a week. To keep it, lay it in a small container. Mix one teaspoon of kosher salt with a cup of cooled serum until the salt dissolves, later pour that over the cheese so that it stays covered.
Freezing mozzarella does not work, because it is too soft and the texture will break. Mozzarella cut with mold should be dumped, even though mold on a whole block one cancut away.
Mozzarella Cheese goes well with prosciutto and summer vegetables. It works also with salads, bread, pastas, meats, chickens and baked peppers. It works cold or melted.
It takes various spices well, because on its own it does not have strong taste. Serving mozzarella covered with romaine leaves forms a nice setup, because one melts while the other nicely caramelizes. White wine or light beer goes with it well.
