Maple Syrup Fructose Calculator
Estimate free fructose and sucrose-derived fructose by grade, Brix, and serving size.
Maple syrup is mostly sucrose. This calculator separates trace free fructose from sucrose-derived fructose equivalent.

Maple syrup contain the sap of sugar maple tree. The sap of sugar maple trees mostly consist of water. However, the sap contains sugar, and when the sap is boiled, the sugar concentration increase to approximately two-thirds sugar.
The cook can measure the sugar content of maple syrup by use the Brix scale. Using this scale, the density of the syrup and the total amount of sugar in the syrup can be determine. Most of the sugar in maple syrup are sucrose.
How much sugar is in maple syrup
Sucrose make up 96 percent of the sugar in maple syrup. Sucrose is an molecule composed of two sugars. These two sugars separates into glucose and fructose only after a person consume the sucrose.
Maple syrup also contains a very small amount of free fructose. However, the amount of free fructose is less than one percent of the total amount of maple syrup. Free fructose is a type of sugar that enters the bloodstream direct.
Sucrose, on the other hand, enters the bloodstream slow after being break into glucose and fructose during digestion. The amount of free fructose in maple syrup can change depending on the grade of maple syrup use. For instance, robust maple syrup, which is a darker syrup, contain more free fructose then light maple syrup.
Robust maple syrup contains between 0.8 and 1 percent free fructose. This higher concentration of free fructose result from the longer boiling process require to create a darker syrup. Meanwhile, lighter grade of maple syrup contain only around 0.4 percent free fructose.
Additionally, the heat of the syrup and the length of time the syrup simmer over heat also affect the amount of free fructose. Adding water to maple syrup will dilute the syrup and decrease the concentration of the sugars in the maple syrup. Using a calculator, it is possible to determine the total amount of sugar in a given serving of maple syrup.
The calculator will ask for the grade of maple syrup, the Brix level of the maple syrup, and the amount of maple syrup that youll use. Based off these variables, the calculator will determine the amount of free fructose and the amount of sucrose in the maple syrup that will eventually become fructose after consumption. One tablespoon of maple syrup do contain free fructose.
However, the amount is relatively small. Therefore, the total amount of fructose that people consume from maple syrup is higher than amount of free fructose that is in maple syrup. Maple syrup has a density of 1.33 grams per milliliter.
This means that the weight of the syrup is differ from the volume of the syrup. For instance, a tablespoon of maple syrup, which measure 15 milliliters, weigh nearly 20 grams. Two-thirds of the weight of maple syrup is sugar.
Because maple syrup weigh more than the volume of the syrup, it is possible that people will consume more sugar than they intend if they dont measure the amount of maple syrup that they use. Depending on what they will eat with maple syrup, people may use different amount of maple syrup. For example, one teaspoon of maple syrup may be used to sweeten one cup of coffee, but half a cup may be need to cook waffles.
If maple syrup will be use in baking, people may use darker grade of syrup for flavor. However, the darker the syrup, the more higher the amount of free fructose in that maple syrup. If the syrup will simmermed to make a glaze, the heat will make the sucrose in the syrup break down into glucose and fructose, increasing the amount of fructose in the syrup.
Many people prefer maple syrup to other type of sugar because maple syrup contains minerals and antioxidants. However, like other forms of sugar, maple syrup also contains a significant amount of sugar. One tablespoon of white sugar contains 13 grams of sucrose, or 6.5 grams of fructose.
Maple syrup also contains mostly sucrose, meaning the sugar in maple syrup enters the bloodstream more slow than other sweeteners. By using specific amount of maple syrup, for instance, one teaspoon of maple syrup for oatmeal or two tablespoon of syrup for a stack of waffles, people can maintain control over their sugar and fructose intake from meals that contains maple syrup.
