The fridge happens to run warm, at forty-four degrees? Then the fermentation will speed up accordingly. And that matters, since a loaf that requires sixteen hours at thirty-eight degrees might overproof in only eight hours at forty-four.
Time isn’t everything. Yeast has a thermal environment, too… So you must understand what it is.
Another key variable is what condition the dough is in when you plop it into the fridge. Some bakers wants to chill their dough while it is still rising slowly at room temperature. They figure the slower rise and the cold will slow the rise evenly as the dough chills. Other people want to cool their dough right away, getting a gradual slowdown from the cold.
